THE 2063 PROJECT

Set 50 years in the future, this lecture and thought provoking dining experience explored our relationship between sustainability and the future of the food & drink we consume.

We created an eclectic menu of Asian-inspired insect dumplings which were accompanied by four courses of cocktails by Mr Lyan, including the Closed Loop; a strawberry-flavored beer that can cleverly feed vegetables while it ferments.
